Gastronomik Bir Değerlendirme Gastronomic Evaulation of The Ottoman Istanbul in The Light of The Two Humour Newspapers Named “Hayal” and “Tiyatro”
Aim of our article is assessing food experience and accumulation of flavour in the light of the information which were given in “Hayal” and “Tiyatro”. If “Hayal” and “Tiyatro” ,which are among the first humour newspapers published in Turkish, are examined in terms of gastronomy, it is noticable that these newspapers include data about Ottoman cuisine and eating /drinking habits. These newspapers target the restaurants that can’t serve its guests in hygeian way, places offer service in Europian style etc. As we understood from the newspapers, in Ottoman İstanbul every place which serves food is always miserable. Istanbullites who want to drink a cup of coffee right after the meal can’t be pleased in the places called “Kıraathane”. ”Hayal” and “Tiyatro” frequently imaged the gastronomic situation of this era in a uncool way. However, sometimes they wrote about the food culture in the excursion spots. We can learn what the public used to eat and drink in the excursion spots from also these newspapers. In addition to that, those topics which we can relate to gastronomy were treated in the newspapers: Ottoman people’s duration of getting used to use knife/fork, foods which were consumed in Şirket-i Hayriye ferries, foods smelling gas which grocers used to sell to the public,situation of the waiters in the restourants etc.
