Özet
Yazımızın amacı, ilk dönem mizah gazeteleri arasında yer alan “Hayâl” ve “Tiyatro”da verilen bilgilerden hareketle, Osmanlı İstanbul’unun yemek tecrübesi ve lezzet birikimi hakkında değerlendirmeler yapmaktır. İlk dönem mizah gazeteleri arasında yer alan “Hayâl” ve “Tiyatro” gastronomik açıdan incelendiğinde, Osmanlı mutfak kültürü ve yeme içme alışkanlıkları hakkında bilgiler ihtiva ettiği görülür. Müşterilerine temiz bir şekilde hizmet veremeyen lokantalardan, alafranga tarzda çalışan mekânlara kadar pek çok şey bu mizah gazetelerinin hedefindedir. Yayınlardan anlaşıldığı kadarıyla, Osmanlı İstanbul’undaki yemek yenilen mahaller - ister lokanta, ister başka bir mekân olsun - hep kötüdür. Yemeğin üstüne bir kahve içmek isteyen İstanbulluları ise “kıraathane” adı verilen mekânlarda kötü bir hizmet bekler. “Hayâl” ve “Tiyatro”, dönem İstanbul’unun gastronomik durumunu (mutfak, yemek düzeni ve sistemini) çoğu zaman böyle olumsuz bir şekilde yansıtmıştır. Ancak, kimi zaman da seyir yerlerindeki yemek kültüründen bahsetme gereği duyulur. 1870’li yılların İstanbul’unda, halkın seyir yerlerinde neler pişirip yediğini, yine mizah gazetelerinden öğrenmekteyiz. Bunların yanı sıra, gazetelerde gastronomi ile ilişkilendirebileceğimiz şu konular işlenmiştir: Osmanlı insanının çatal-bıçak kullanmaya alışması, Şirket-i Hayriye vapurlarında tüketilen yiyecekler, bakkalların halka sattığı gaz kokulu yemekler, bozulmuş ve kokmuş yiyecek satan esnaf, lokantalardaki garsonların durumu vs.

Abstract
Aim of our article is assessing food experience and accumulation of flavour in the light of the information which were given in “Hayal” and “Tiyatro”. If “Hayal” and “Tiyatro” ,which are among the first humour newspapers published in Turkish, are examined in terms of gastronomy, it is noticable that these newspapers include data about Ottoman cuisine and eating /drinking habits. These newspapers target the restaurants that can’t serve its guests in hygeian way, places offer service in Europian style etc. As we understood from the newspapers, in Ottoman İstanbul every place which serves food is always miserable. Istanbullites who want to drink a cup of coffee right after the meal can’t be pleased in the places called “Kıraathane”. ”Hayal” and “Tiyatro” frequently imaged the gastronomic situation of this era in a uncool way. However, sometimes they wrote about the food culture in the excursion spots. We can learn what the public used to eat and drink in the excursion spots from also these newspapers. In addition to that, those topics which we can relate to gastronomy were treated in the newspapers: Ottoman people’s duration of getting used to use knife/fork, foods which were consumed in Şirket-i Hayriye ferries, foods smelling gas which grocers used to sell to the public,situation of the waiters in the restourants etc.
